Electric Cooking

What is Electric Cooking?

  • Electric cooking uses electricity instead of gas burners to heat your cookware
  • Electricity is sent into a resistive coil, which then radiates heat from the coil to your cookware, heating the cookware indirectly through conduction
  • Induction cooking is another type of electric cooking that uses electromagnetism

Benefits of Electric Cooking:

  • Better Indoor Air Quality: Free from nitrogen dioxide and other harmful pollutants that gas burning stoves emit
  • Affordability: Electric is less expensive to cook on than gas
  • Energy Efficiency: Electric ranges are 74% effective at transferring heat to cookware, compared to 40% effective for gas ranges
  • Safety: No open flame or potential gas leaks
  • Reduce Emissions: Eliminates methane leaks and substantially lowers emissions compared to gas ranges
  • Easy Cleaning: Modern smooth surface electric stovetops allow for easy spill clean up
  • Cookware: Electric cooktops are compatible with all cookware

Key Considerations:

  • Type: There are a variety of options to choose from including standalone cooktops to all-in-one ranges that have both a cooktop and oven.
  • Size: Common range sizes are 24 or 30 inches wide. Be sure to carefully measure your space when considering options.
  • Electrical Outlets: Most electric ranges require a 240 volt outlet. If you don't already have one, an electrician can install one for you.
  • Controls: A variety of control styles are available including knobs, digital touch controls, or a combination of both.
  • Speed: If cooking fast (especially boiling) is a priority for you, consider upgrading to an induction cooktop

Cost Breakdown:

  • Cost of electric ranges can vary significantly, the average cost of an electric range is $700

Climate Impact:

  • According to the National Laboratory of the Rockies ReStock tool, switching to an electric cooktop in Utah could save up to 155 kgCO2e of emissions from natural gas annually
  • This is equivalent to reducing the emissions from burning 172 pounds of coal each year
